My students need a refrigerator so they can explore healthy eating habits before heading to college.

My Students

Who doesn't love to eat? Certainly, my students are no exception. Many are heading to college next year, and are already hearing about the Freshman 15. Before they go, I want to help them learn more about healthy eating and how to develop good habits that will last a lifetime.

Our county is in a rural, high-poverty area, where family members often suffer from poor health, obesity or diabetes due to unhealthy habits.

Ours is a new school, and this year's seniors will be our second graduating class. One hundred percent of last year's seniors were accepted into college, and this year's seniors have their eyes on the future as well. They are proud of their new technology-based school and are enjoying their first full year in our new building. However, county funding only allowed the construction of Phase One, and our school lacks a fully equipped cafeteria. Meals are brought in from the outside and served in a small modular unit. I help sponsor the very popular culinary arts club, but with no cooking facilities, activities are a real challenge.

My Project

Seniors in culinary arts club are already aware of the dreaded "Freshman 15", that promised weight gain for students who fall into unhealthy habits when they go off to school. They have come up with an idea of creating a healthy eating manual geared for college students with limited time, facilities, and budgets. They want to explore some recipes that use healthy ingredients and can easily be prepared in a dorm room. Having a refrigerator for storing ingredients will help students in culinary arts club to work on this project successfully. The online cookbook will be available for all of our students and we hope to add to it over the coming years. In the future, we also plan to team up with the science class (which just received a greenhouse grant) so we can grow, store, and freeze vegetables students can have as snacks or take home to share. The results of some of their cooking efforts will be shared with the student body at special events.

Learning about how to lead a more healthy lifestyle is one of the most important lessons a school can teach.

Too many students are at risk of becoming obese or developing more serious health problems due to poor eating habits. As our students set off for their future, knowledge of nutrition will help that future be even brighter.
