One of our experiments involved testing the impact of natural versus artificial light on plant growth. Students were excited to see their plants growing in both situations. Although we tried to keep as many variables consistent-- same soil, same seeds, same planters, etc.-- we couldn't control the amount of wind and water (for the plants grown outdoors). This led to a rich discussion with insightful thinking from second graders.\r\n\r\nTo continue my students' interest and excitement, our next step is to plant various healthy vegetables for them to harvest. This followed an activity where my students tried vegetables that they hadn't eaten before. My goal was to have my students be open to trying healthy foods. We also talked about being self-sufficient, especially living on an island where we depend on imports.
