Help me give my students a connection between the chemistry concepts and how they impact them on a daily basis. Students will use toaster ovens to understand the chemistry of baking and the development of plastics through resins.

Celebrating Hispanic & Latinx Heritage Month
This project is a part of the Hispanic & Latinx Heritage Month celebration because
it supports a Latino teacher or a school where the majority of students are Latino.
My Students
My students attend a high-needs high school in New York City. Our school focuses on developing critical thinkers who can express their understanding through projects and defending their work through oral presentations. Most of my students work hard at school, get to school by public transit, then after school, work, take care of their family, or do sports, theater, or college prep.
My students ask curious questions and learn best through hands-on science explorations and involving their communities.
They build on their learning, have needs, and come to school to learn chemistry, neuroscience, computer science, math, and AP English. They ask questions and are curious - even about cacti and water evaporation and batteries and space!
My Project
Students will make quick and engaging connections between challenging chemistry concepts, such as chemical changes, polymerization, Maillard reaction, acid-base reactions, and gas production, and the world around them.
The toaster ovens will be used to learn about carbon dioxide production in bread-making and the infamous Maillard reaction that gives food that amazing brown and flavor.
The resins and dyes will be used to explore polymerization and lead to understanding how the world has been shaped by the use and production of plastics. Students will challenge their own understanding of plastics and food by developing connections to the intricate world of chemical reactions. The ascorbic acid (vitamin C) and cheese making kits will help my students learn about acids and bases, the concerns about scurvy during the 1500-1600s, and its use as a preservative. The beakers provide the vessels for our exploration.
All of these materials provide an amazing opportunity to understand why science is not only important, but critical in making our everyday food, materials, and activities possible.
