My students live in a food dessert where healthy food options are either not readily accessible or expensive. Because of this, students often eat the snacks at the corner store for breakfast and lunch. The meals in the cafeteria often do not look appetizing due to the lack of food resources given to cafeteria workers. The low nutrient dense snacks that students are consuming are high in sugar and salt. This food is low in protein, fat, and fiber which would keep them satiated throughout the day. My students are often eating chips, candy, and ice cream for breakfast and lunch while at school. Other students end up not eating throughout the duration of the school day, due to lack of money or because they do not want to consume the cafeteria food. This can lead to students being tired and unable to absorb lessons for the day. While I cannot provide full meals for my students, I hope this project gives them the opportunity to eat some healthier versions of the snacks they are used to, so that they can develop healthy eating habits at an early age. This can also help students at home because they can bring these snacks home if needed.
