A Cut Above the Rest

Help me give my students sets of color-coded cutting boards, plastic kitchen knives and spray bottle to help teach them knife safety and cut skills, as well as proper cleaning and sanitation.

My Project

I teach in a low-income school, located in northwest North Carolina. I teach Family and Consumer Science- Foods and Nutrition I & II classes to 9th-12th grade students. These courses are within the Career and Technical Education program. Students within our school face daily challenges, such as adequate housing, transportation and food insecurity. In my class, the students will learn life management, transferable, and employability skills which will benefit them long past high school. The Foods and Nutrition courses focus on preparing students to balance personal, family, and work responsibilities.

Providing my students with the sets of plastic knives and color-coded cutting boards will help them learn to use knives correctly and allow them to practice proper knife cuts on the appropriate cutting boards to prevent cross-contamination.

Once the lab experience is complete, the students must also learn how to clean and sanitize the prep and cooking areas properly. Acquiring these skills will help the students be more independent in caring for themselves, as well as provide them with a foundational understanding of concepts and skills that would be useful if seeking a job within the food industry.
