Unfortunately it was backordered during an enzyme action unit this fall when I would have used it, but when I begin our carbohydrate chapter this spring with my juniors, it is going to make our investigations incredibly dynamic!\r\n\r\nIt can be confusing to students when we explain that there are many different configurations of sugar molecules. There are inexpensive refractometers that identify the presence of sugar (often used in the brewing and wine-making industries), but they do not distinguish between sugars, nor are they precise. With this amazing new refractometer, my students will be able to measure the sugar content in many different foods very precisely, and will even get to compare the sugar molecule identification!\r\n\r\nI most look forward to using this product next fall with my seniors, when they study enzymatic action. People who are lactose intolerant do not produce enough lactase, so they are unable to break lactose down into glucose. That lactose irritates the digestive system. Every year, I conduct a lab where my students grind up Lactaid pills and apply them to milk, varying the pH and temperature and seeing how much glucose is produced. We have had to rely on urinalysis testing strips which are not precise at all. I am so excited to use this refractometer next time, so my students produce precise data that can be graphed for truly illuminating patterns and conclusions!
