As someone with celiac myself, I know food choices can be challenging for kids and with a very high poverty rate. A celiac diagnosis presents families with the additional burden of providing safe foods which are almost always higher cost. Kids feel this burden. \r\n\r\nWhen I presented your snack boxes to share with their peers to my students with celiac disease, their relief and gratitude was clear. A second grader hugged me and proudly shared with peers. A middle schooler said she felt seen. We all appreciate the support of food that is safe and shared by all students. The high-quality materials allowed students to clearly communicate complex information using visuals, color-coding, diagrams, and concise scientific explanations. One powerful moment was watching students debate how to best show nutrient runoff or how to make their warning messages clear for a public audience—exactly the kind of authentic STEM thinking we strive for.\r\n\r\nWhen students first saw the new supplies, their excitement was immediate. They took pride in their work, carefully planning layouts and asking thoughtful questions about how to make their posters both accurate and eye-catching.
