My students need to explore how to create nutritious, easy, and delicious meals that reflect their cultures. Together with a refrigerator and a range-top, we can readily conduct interactive lessons to practice this important skill.

My Students

"Miss, I'm hungry." repeated one of my many students who has the responsibility of dropping their little sister off at kindergarten and then rushing to get to class by 8 AM. Awaiting the free-lunch provided to them on socioeconomic status, their breakfast comes from the quick $1 bag of chips and soft drinks they find on their way to school. Fueled by corn and corn syrup, they drudge on to their classes, lethargic, hungry, and frequently ill, and struggle to find educational experiences that are meaningful to them.

My students are extremely self-aware and passionate about the political, medical, and social issues that affect themselves and their community.

They love to work with their hands, express their creativity, move about the room, and crave praise. Our classes are full of diverse learners, often bilingual and many working with learning disabilities. We foster a culture founded on empathy, advocacy, and real-world problem solving in order to prepare our students for college. However, with over 1,500 students at our high-poverty school, resources are scarce, and it is challenging to find the tools that will allow us to discover solutions.

My Project

Students will be learning how to decode nutrition labels, answer the "what is a calorie?" question, analyze food costs, and identify optimal macronutrient intakes for a meal. Students will be using the refrigerator to store fresh and affordable ingredients to make in-class meals on the range that they will be able to share with families and peers. Students will see, prepare, cook, and taste traditional culture-inspired cuisines represented in our diverse student body, and create modified and cost-conscious versions of these dishes designed to enhance the nutritive value.

Through their common love for food, we aim to engage and appreciate our diverse cultures through a co-creative and constructive process, while fostering an environment for empathy and collaboration to improve our health.

Many of my students have never interacted with foods from other cultures, and this experience will provide them a hands-on opportunity to engage with their peers in a positive manner. They will use the recipes they have created and practiced in class to bring home a student-generated cookbook complete with macronutrient information, grocery cost estimates per recipe, and photographs that they can share with their families. Students will discover that the educational process produced a final product relevant to their lives and representative of themselves. Ultimately, they will be empowered to take their cooking skills and nutritional knowledge to make smarter food choices that will improve their well-being and the lives of their families. My students for this year, as well as many years to come, will be able to utilize and grow from the funds you provide.
