Our high school culinary program emphasizes restaurant, catering, and other food service practices in the food industry, and students earn certifications in food handling and management at various levels. Our Pro Start team has competed against some of the best high school culinary programs in the state; for the past two years, our team has earned 2nd and 3rd in the state, which is the best rating Heights has earned to date! With the excitement of success, students created their restaurant called Falcon Feeder. Currently, Falcon Feeder is open for lunch one day a week, but they would love to expand their business.
Because our culinary program has grown exponentially these last two years, we have been given the small glass-enclosed courtyard in the student commons area to use for growing herbs and other edible plants and flowers.
Growing our herbs will not only save money but allow students to experiment with new flavor profiles. Students have excitedly formed a plan and begin the preliminary legwork to break ground on Earth Day. We have procured funding for the raised beds and some larger items, but we need other items to complete our project; our space will include four raised beds for herbs and edible flowers, as well as a flower bed for pollinators with a water feature. We will need basic gardening tools, watering supplies, and pots and planters for plants that become invasive or that just need to be brought inside for the winter. Each plant will have a label with a QR code that explains how to use the plants in culinary dishes. When collaborating with students, a Pro Start senior said, "How cool would that be to just walk down the hall and pick fresh herbs to use in our dishes!"
