My Project

At our campus, we are harnessing the power of agriculture to create a unique value-added product: kohakutou, a Japanese crystal candy made using fresh strawberries, mint, lilikoi, and dragonfruit grown in our own gardens. This initiative not only promotes sustainable farming but also highlights a powerful message of resilience and inner strength.

The kohakutou candy resembles beautiful, shattered crystals on the outside, yet beneath the hard surface, it remains soft and chewy.

This duality serves as a symbol for our students. Like the candy, many of them may appear tough on the surface, shaped by life's challenges and hardships. However, beneath that exterior lies a deep resilience, a softness that reflects their capacity to grow, recover, and thrive.

There are two symbols this candy will represent. First, just as the candy appears to be broken, our students have had experiences that may have shattered parts of their lives. However, within those moments, they find the sweetness of memories, learning, and personal growth.

By using the fresh produce we grow on campus, this project emphasizes the importance of sustainability and value-added agriculture while also promoting mental health awareness through a product that tells a story of hope, healing, and resilience. These candies are more than just a treat—they are a reminder that, even when life feels fragmented, there is beauty and sweetness to be found in our capacity to persevere.

This value-added agriculture business offers students a hands-on introduction to financial literacy by exploring real-world business concepts in a simple, accessible way. Through activities like pricing products, managing budgets, and marketing their goods, students gain practical experience with essential financial skills. They learn how to calculate costs, understand profit margins, and evaluate sustainable business practices, all while developing an entrepreneurial mindset.
