Help me give my students the ability to find an art style and medium that speaks to them. We have done one clay project this year and my students keep begging to do more!

My Project
I am a middle school teacher with classes busting at the seams. I try to give my students a great amount of choice in their work and whenever I let them choose their medium, it is overwhelmingly clay. I have a kiln that I have taught myself to use and we have experimented with pinch pots, coil pots, and various textured sculptures. My students want more. I found a wonderful dragon's eye lesson but do not have enough clay to complete this project.
With classes as large as mine, it is always a struggle to get everyone engaged.
Clay is that medium for my students. I also have two pottery wheels that have sat in my storage closet for years, so long that the belts have hardened and crumbled. This is my next challenge, finding someone to fix them and teaching basic wheel-throwing techniques. That said, we will need clay.
