Help me give my students build skill sets with two different LEGO block sets.

I teach in a public school in a growing community.
The diversity at our school comes from the economic levels and our English as a second language learners.
My school has an enrollment in kindergarten through 5th grade of a little over 650 students. The town population is around 70,000, with 18 elementary schools in the district. I teach in a self-contained second grade class. I have 25 students. I teach students with a wide range of learning abilities. I have 10 Caucasian, 12 Latino, two Marshallese, and one African American student.
The LEGO block sets will give my students opportunities to build skills in many different areas while having fun.
The Legos can be used in many economics activities.
An example would be an activity where the students create structures with limited number of supplies. They can also create creative projects during STEM activities. The blocks are also good with building team work skills. The students practice sharing, communicating, and other skills that they will use on any job situation. The blocks can also be used to teach many mathematic skills. The students can use them as counting collections, area, perimeter, and other skills.
