My students need canning supplies in order to meet their objectives for preserving healthy food and learning about farm to table as well as sustainability.
Have you ever heard of herding cats or organized chaos? Well, that is how I would have to describe my students during cooking labs. I mean that in the most heartfelt way. These high schoolers are excited and ready to go during cooking labs. Many of these students come from impoverished backgrounds and teaching them how to cook an inexpensive meal truly benefits each one. They are eager to learn a skill that will be utilized for the remainder of their lives.
My Project
In Foods & Nutrition, I will teach students about food protection. They will apply their knowledge about nutrition science and food preperation during the canning process. Foods & Nutrition students will learn what farm to table actually means when canning and preserving food. While undergoing this project, students will see the process of food preservation first hand. For example, in class we will select cucumbers from a local produce stand. We will make sweet pickles and dill pickles. From this same produce stand, we will aquire fresh fruits to make jam or jelly. Students will make fresh salsa in class and can it.
Many people in the community have already heard about our project and want to purchase our finished products.
This will encourage the entrepreneural spirit in my students. Students will handle money by putting it in an account where it can be later used to purchase more supplies needed for canning.
