Basic culinary requires that students learn about basic knife skills. I would like to go more in depth with my classes and teach them skills that they will use outside the classroom. One of the lessons I would like to teach is on meat fabrication. With the help of a fellow teacher we will acquire a beef or pig to show how to fabricate/cut up and use the meat cuts for different dishes. With the help of the kitchen aid meat grinder and sausage stuffer, the knife sharpener, and the cart I can teach students how to make their own sausage and get more in depth with meat fabrication. I would also like to have a knife sharpener to aid in meat fabrication and knife skills. The cart will be used to transport materials around my classroom. We also need a food grinder.
