Foreign Language Week is celebrated every year in March, during this time I teach my students how to cook authentic Italian and Hispanic cuisine and we enjoy the food together as a family the last day. My mom takes the day off of work and comes to school to help me serve the food and also talk to my students about our Italian background. We listen to Italian and Hispanic music while we cook. The Italian classes learn how to make pasta dough to make spaghetti using a traditional pasta machine. They learn how to make potato and ricotta dough to make gnocchi. I teach them how to make meatballs using my family's recipe. I then take the meatballs home and make my family's sauce recipe and cook them. They learn how to make homemade pesto sauce and desserts (pizzelle cookies, ricotta cookies, and cannoli cups). I have my students try prosciutto and parmigiano cheese off the block. The majority of my students have never tried prosciutto or parmigiano cheese before. The Spanish classes learn how to make homemade tamales, sopes (an authentic Mexican dish), refried beans, salsa, homemade tortillas, and flan. They chop and marinate the vegetables that are used to make the sopes.
