I teach nutrition in classrooms under a national nonprofit called Americorps Foodcorps and we teach hands-on cooking and gardening lessons and these lessons are creating a future in which students––regardless of race, place, or class––know what healthy food is, care where it comes from, and eat it every day. The lessons that I will be doing are cooking lessons where students will be preparing a healthy meal. My upcoming lesson is a sauté lesson where students will be able to prepare vegetables for a healthy dish, including carrots, peppers, kale, spinach etc. Students will be able to determine the ingredients they prefer using a sauté cooking technique. This lesson will require cutting mats and Child Safety Plastic Kitchen Knife Set. It also requires Ikea plastic plates and bowls and cups for the kids to eat from once they have finished preparing their meals. Other things that are needed for other lessons are bowls of different sizes to mix ingredients. When in the garden we do a lot of investigations so we need to use magnifying glasses to get a better look at the bugs we find in the garden or observing how the leaves look. This lesson is adapted to English Language Arts Common Core State Standards. Healthy food is a building block for a full life. But right now, not all kids have access to healthy food or education about how to make healthy choices. In the United States, one in three kids are on track to develop diet-related illness in their lifetime. For kids of color, it’s one in two. School is a place where we can correct these injustices, providing healthy food access and education for all kids. FoodCorps helps schools become places where kids get the nourishment they need to thrive.
