I have observed that students enjoy building things with their hands. Most of the day they use electronic devices for learning so giving them the opportunity to build something and evaluate it's effectiveness provides a more authentic learning opportunity. Students love hands on projects where the success criteria is determined by the performance of their build. When they build their rockets, their grade is not subjectively determined by me, but rather on how well their rocket performs. This provides an unforgettable experience that they will remember for years to come.
