The Frey Inquiry Investigation, Learning to Make Cheese-The BioTech Way Lab will allow my 8th grade students to witness cheese making first hand while working through the scientific practices. One of the technology components of my middle school curriculum is to explore how science and technology affects the quality of our lives. The technology of cheese making allows us to improve food production and preservation; thus, improving our ability to meet the nutritional needs of growing populations. In the past, I would task my students to research food preservation methods through an independent computer webquest. This year, I would love for my students to work hands-on; designing (with some guidance), planning and carrying out an investigation to determine which factors affect the cheese making process. Working through the science and engineering practices, my students will have an opportunity to explore such variables as pH; where the pH sticks will be put to use, temperature, or milk fat content. Your generous donation of ph sticks, kits to make cheese, and cheesecloth will allow me to go beyond meeting a science standard and allow students to see the real world relevance of food preservation in an interactive way. This biotechnology kit has inspired me to combine the nature of science with food preservation, but I am truly hoping that this cheese-making experience will inspire one of my students to "say cheese" and thank you!
