We are an urban school located in the Pacific Northwest. Our student population is quite diverse with a variety of academic, physical and emotional needs. I am lucky to work with all 400 students in Kindergarten-5th grades. These kids value their time in Health & Fitness class, and they demonstrate strong content knowledge in nutrition-related lessons. Unfortunately, my daily visits to the lunchroom clearly show a disconnect between learned information and daily eating habits. Many of our students are throwing away their fresh fruits and vegetables in favor of more artificially sweetened foods. Each day our compost bin is full of apples or oranges or carrots that have hardly been touched. My repeated efforts to share the nutritional value of these foods in class and at lunchtime have failed to make much of a difference. I am certain that our students would change these habits if they were able to use their own fruits and vegetables to make tasty smoothies.
