My Students

I want to incorporate in our lab sequence a unit that focuses on teaching about food chemistry; more specifically on fat contents of different foods and how this can affect health -- why it is not a good idea to eat fast food everyday.

We are a public school in the suburbs of Tulsa, OK.

Our student population is quite varied in many ways. We have our share of problems with obesity. This is one of the reasons I want to start this lab module for my biology and chemistry classes. We also have no budget for the lab this year, which makes it almost impossible to start something new like this.

My Project

Incorporating this unit into our lab sequence will expose the students to how high the fat content in certain fast foods can be. Hopefully it will help them to make wise decisions in changing their diets for the better, lose weight and stay healthy. In this country we have too many people with weight problems. If I can help stem this problem in our own student population, then it will be very beneficial for them and their families in terms of life expectancy and quality of life. There is also an upswing right now in the country to learn more about what is in our foods, food chemistry, and the world of the food chemist/technician. We need a blender and cylinders for studying the fat content of fast foods and to understand more fully the consequences of eating foods high in fats. This is a fun unit and can inspire some students to want to go into chemistry and biology. In the unit, we blend up things like hamburgers and french fries. After heating and stirring, we pour the mixture into the graduated cylinder, the fat rises to the top and forms a layer. Number of milliliters of fat divided by the whole represents fat content.

I am hoping this project convinces students to not stop at the fast food place on the corner after school everyday, but to go home and have an apple for a snack after school.

If schools across the country would incorporate something like this unit into their biology and/or chemistry curriculum's, maybe we could put a dent in the overweight problem in this country.
