My Students

Many Foods students are accustomed to using the microwave at home. While we cook from "scratch most of the time, the use of the microwave is necessary for many operations. One of our ovens "died" and we are down to two in a 6 kitchen lab and a total student count of 30 per period.

We are located in a rural setting with a district that is 647 sq.

miles in area. Federal guidelines place us as a poverty school with a free and reduced rate of over 80%. We have 249 of our students homeless at this moment or 6% with the federal average as 4.2% They are wonderful students and enjoy the opportunities that the Foods lab offers them. I try to have them think out of the box in their food choices and to use their resources more economically and with imagination. Currently all 5 of the Foods classes are above capacity and next year, it will be the same. The Foods lab is divided in to three levels and the Culinary Arts (3rd level) serves as a catering team for the public. All foods students are encouraged to participate in the many opportunities to help the school by making food for school functions.

My Project

The addition of the two microwave ovens is necessary to 1: replace one lost to an electrical problem and 2: add extra capacity to our lab experiences. We have a 70min lab period and we all need to move fast or the students do not get done. Additionally, I offer a couple of lessons where we use the microwaves almost exclusively so it does get cramped in the area of the ranges.

I have so many students who are at or below poverty and rely on very few resources.

I must be able to offer them techniques that they will use now or in the future and the microwave oven and the foods it can produce are essential knowledge for them.
