Light Years from the Classroom to Career and College Training

My students need a Kitchen Equivalents Bingo Game and 6 DVDs on food garnishing, sanitation, the new food pyramid, food preparation and safety.

I am the high school culinary arts chef instructor for a small country school district in South Carolina. We are also a priority school with three schools in the district. My food lab and class room are located about 4 miles from the high school. I instruct culinary arts I and II in basic to advanced culinary arts skills in career preparation and college training. My students are in 9th to 12th grade and most of them are classified as disadvantaged students and about 99% Afro-American. I have a large number of special education students mainstreamed in my program. These students need a lot of hands on and theory training to build skills for future employment.

There are several ways students obtain information. The old stand up in front of the students and lecture or write on the board are slowly slipping away. Multi -media equipment, demonstrations from professional people in the industry and colleges, computers, smart boards, and extensive research learning libraries are on the move in education. It takes videos and DVD’s to round our visual methods in reaching many students. Yes, we need up-to-date DVDs in our culinary art program to help our students fly and land on the correct career path! My small rural district is awesome and they have purchased me a TV, a fully working computer, and DVD player for the next school year.

The 15 year old videos do not reflect a time frame of today’s students can associate with. DVD’s are expensive and the six I have chosen are for two grant points, so I have chosen them to be able to help train students and add to topics that will not be completely covered in the states videos if I ever obtain them.  The kitchen equivalents bingo game will be played several times to build student skills in culinary arts.  After viewing the DVD on baking basics, the classes will go to the food lab and create some things from the training. They will also use principals learned from the sanitation, safety, and operational DVD’s they viewed before the hands on classes  After watching the DVD on Food Garnishing, the students will go to the food lab and recreate the professional skills viewed, and demonstrate skills learned in the theory class.  With the DVD on the new pyramid, they will watch the training and break up into groups and create a poster from each group on what food items we have in the shop and where it fits on the pyramid.

What kind of learning can be done in a classroom with one Internet access, a window 95 program,a Dell computer with no working CD drive, limited old videos, no working VCR, and a limited books to do a research projects. With the addition of the technology additions, I am suppose to get this fall, I really need DVD’s on food garnishing, sanitation, the new food pyramid, and several on food preparation and safety to reach new class of students coming in and to motivate the existing returning class and expose them to training they need before completing Culinary Arts II.
