Once we get to the Cardiovascular chapter, we will dissect the heart. Lastly, as the summative assessment for the course, students will dissect a fetal pig. By cooking eggs in each type of pan, students were able to directly observe differences in heat transmission, heat retention, and surface interaction. Cast iron pans demonstrated slower heat-up times but superior heat retention and more even distribution once fully heated, while nonstick pans heated more quickly but lost heat faster. These observations led to meaningful discussions about conductors of heat, thermal mass, and how different materials affect cooking outcomes at the molecular level.\r\n\r\nBecause our kitchen uses electric ranges, students also learned how heat transfer differs compared to gas ranges. We discussed how electric burners rely on consistent contact and radiant heat, making pan material especially important for even cooking. Students analyzed how cast iron's ability to retain heat can compensate for the cycling on and off of electric elements, while lighter nonstick pans respond more immediately to temperature changes. Some students doodled, some wrote paragraphs and paragraphs, some stuck to the prompt and some didn't.
