Celebrate Hispanic & Latinx Heritage Month

This project is a part of the Hispanic & Latinx Heritage Month celebration because it supports a Latino teacher or a school where the majority of students are Latino.

My Students

I teach a course called Healthy Lifestyles to a group of students from all high school levels. This class is an opportunity for students to learn that they DO in fact like healthy food when it is prepared well, as well as to learn how to cook healthy meals and snacks. This is a life essential.

My students are by and large low income students living in a large urban area.

They do not have easy access to healthy food options easily. The corner stores nearby sell them chips and soda, but they have limited produce and other healthy options. There is a grocery store not too far away, but my students need to learn how to prepare and cook healthy food at home on their own. Many of their parents work long hours and are not home at meal times. Many of my students also care for younger siblings at home. This program has the potential to change the eating habits of my students and their families in a very important way.

My Project

In class, we will use these materials to prepare enough of a healthy meal or snack so that my students can try a dish and learn how to replicate it at home. I have been running this program for a number of years, and I have found that my students often gain a great deal more openness in terms of the foods they will try and eat, even in the course of one school year. I have had students never want to try anything at the beginning, but by the end of the year, they take home every single recipe and make it at home for their families. These materials will help us to expand what we can cook in a given week and will make it easier to demonstrate how to properly prepare a healthy meal at home. This will enhance the program and magnify its effects, not just for this school year but in future years as well.

My students will leave high school with a better understanding of healthy food and a more open mind when it comes to trying new food and experimenting in the kitchen with various healthy ingredients.

This is a lifelong skill and mindset, one that they will take with them into adulthood and pass on to their own children.
