Student-Centered Farm-to-Table Healthy Eating in Kindergarten

it supports a Latino teacher or a school where the majority of students are Latino.
My Students
My students come from low socio-economic homes. They enter kindergarten with limited English and have limited support at home. I build rapport with both students and families to create a home-school working relationship to help their child improve.
Hands-on activities, visuals, songs with hand movements, and videos help my students with language acquisition and learning.
Having little to no language support at home makes their language acquisition challenging. I use eclectic approaches at teaching--integrating various forms of media--to help maximize instruction.
Many of my students are unaware of what healthy eating habits are. I not only teach my students the curriculum, but how to eat and live healthy. I teach and encourage exercise and healthy eating habits.
My Project
As part of science, my students learn about flowers and the planting process. They love the hands-on experiences; however, when reading about other things that can grow from soil, the students showed interest in growing their own food to eat in class. The students created a list of foods and herbs that they would be interested in growing in the classroom. They also decided on dishes to make in class to eat. They plan on trying new things (like beets and herbs) but also want to eat healthier and fresher versions of things they already eat (like salsa and carrots).
Inspired by student interest in planting food to eat in class, I chose to plan a Farm-to-Table unit where students not only grow, care for, and learn about fruits and vegetables, but they get to eat them in class.
The unit integrates science (learning about plants) , health (specifically nutrition), and language arts (students will keep logs and write about the growing process). Students will work together to care for the garden, discuss results, plan healthy meals, and compare the indoor and outdoor gardens.
The indoor garden will be used for my students to plant and grow food all year long. Brutal NY winters can hinder the growth of many plants, so I planned for the indoor garden to be used in the winter months. The warmer months, particularly in spring, students will not only be able to plant vegetables and fruit, but be able to do it outdoors in the sunlight. This is particularly important in the Bronx, as many students do not have access to outdoor gardening. Students can find alternative ways of growing their own vegetables, herbs, and fruit (with indoor gardens) to further promote healthy living inside and outside the classroom.
