Slow Food In The Classroom

My students need a starter garden kit and classroom greenhouse. Because they are visually impaired, they also need a big screen microscope to help them see the fruits (and vegetables!) of their labors.

I teach in a large, urban district in Michigan. All of my students are visually impaired or blind, and all are low income.

My students, who are visually impaired, live in a big city with limited access to healthy foods or gardens. Unfortunately, their diets often consist of highly processed, sugary food. In their minds, food comes from the grocery store, not a garden. To help teach them good nutrition habits, I am developing a "slow food" unit. We will begin by growing simple plants in the class greenhouse and eventually have a garden outside of our school. To help them see the seeds, pollen and plants, they will need the big-screen microscope. These students are bright and eager to learn. When I said that we were going to do a unit on food, they were very enthusiastic and excited to have their own gardens. They even asked if we could take a field trip to the farmers' market!

The classroom greenhouse will provide us a safe place to begin our unit. The big-screen microscope will help them see the results of their labors. After we complete this unit, I hope to have a year-long project next year wherein we plant in the fall and study plants throughout the year. (I will have the same students next year).

I realized that I needed to do this unit when one of my students said that he ate fast food at least three times a week. When I asked him where the food came from, he said "the store." By giving them the gift of gardening, you will be instilling healthy eating habits that will hopefully last for a lifetime. Thank you from the bottom of my heart.
