Help me give my students a hands-on way to explore mendelian genetics.

My Students
I teach in an inner city school where many of my students come from all walks of life. Many of my students do not have access to the basic necessities of life and therefore have limited access to technology or even internet access. Even so, they have amazing goals and want to go to college to better their lives. My students are hard working and love a challenge.
As we have studied biology and other science disciplines this year many have risen to the challenging new curriculum.
As part of the curriculum, we want to be able to collect data using modern tools and instruments that will better match what they will see in college or beyond.
My Project
As part of biology each year we explore Mendelian genetics and how traits are passed from parent to offspring. While students are engaged and love to learn about heredity and genetics we have not been able to explore this topic hands-on due to the limited time we have.
The purpose of this project is to purchase seed discs that are designed to grow quickly and students will be able to observe the outcome within days instead of months.
This will allow students to collect their own data, compare their data with other students and compare that with the expected data. We will be able to talk about the importance of sample size and controlling variables.
