Food Safe Lab Station: Demonstrating Chemical Reactions & Phase Changes in Cooking
Driving Question or Challenge:
How can we design a food-safe lab station that demonstrates the chemical reactions and phase changes involved in cooking to enhance the learning experience in culinary and science education?
Real-world Context:
This project connects students to real-world challenges in the culinary and food science industries. Understanding the science behind cooking processes, such as caramelization and emulsification, is essential for chefs and food scientists. The food-safe lab station can be utilized in schools, culinary institutes, and food industry research, addressing the need for safe and effective educational tools that demonstrate complex scientific concepts through hands-on experience.
In-depth Inquiry:
Students will engage in deep inquiry by researching various chemical reactions and phase changes that occur during cooking. They will explore questions like: What are the chemical processes involved in baking? How does temperature affect phase changes in food? Students will conduct experiments, witg the measuring cups,and gather data, and analyze different cooking methods, encouraging curiosity and critical thinking about the science of food.
Student Voice and Choice:
Students will have the freedom to choose specific chemical reactions or phase changes they want to focus on for their demonstrations. They can decide how to structure their presentations, whether through a physical model, a digital presentation, or an interactive demonstration. This autonomy empowers students to take ownership of their learning and express their creativity.
Reflection:
Throughout the project, students will keep a reflective journal to document their learning journey, including successes, challenges, and personal growth. Regular reflection sessions will encourage them to think critically about their experiments, the scientific principles they are learning, and how they can apply this knowledge in real-world contexts.
