My Students

Middle school is a time for exploration, and S.T.E.M. gives my diverse group of 6th, 7th, and 8th graders the perfect opportunity to challenge themselves by asking questions, exploring multiple angles, and using their creative imaginations. The semester S.T.E.M. elective I facilitate is open to all mainstream students as well as students from our moderate-severe special day classrooms, allowing students with diverse needs to experience full inclusion as part of our K-8 community.

Career Technical Education has become a focus in our district, even at the middle school level.

Students learn best through hands-on learning experiences that provide the opportunity to learn skills not available in regular classroom programs, and these are experiences I strive to provide through my S.T.E.M. elective. Most of our students have the opportunity to apply to the Business Academy at our high school, which is a unique course of study designed especially for students with an interest in and aptitude for Business and Management.

By working through project-based challenges, my students learn important skills such as working cooperatively with others, taking initiative, having good time management, staying organized, engaging in critical thinking, and creativity and problem solving.

My Project

One area of focus of the Business Academy is in Culinary Arts & Hospitality Management. The goal of my project is for students to gain hands-on experience that would prepare them for a career in culinary arts and hospitality. In this project, students learn how the food in the food supply is tested and how to prioritize resources for food testing. Students learn about food chemistry and also investigate the digestive processes, both mechanical and chemical, in humans and how it works to deter foodborne illness. They discover how bacteria and other contaminants can cause food poisoning and learn safe food practices. The project culminates with students developing new guidelines for their fictional professional kitchen. I’ve facilitated this project with one pair-group working at a time, but now I’d like to roll it out so that all 18 pairs can simultaneously participate.

For my moderate-severe special needs students, they have the opportunity to work on social skills, communication, as well as fine-motor skills.

Part of the project involves students performing an inspection of the kitchen we have on campus, and this is where these students shine as they practice communicating with adults on our campus during their inspection. The skills that ALL students gain prepare them for these careers: chefs, food science technicians, health inspectors, kitchen designers, sous and line chefs, and restaurant waitstaff.

As I move forward with this project, I need enough materials so that the entire class can complete this project at the same time, and this includes molecular model kits, hydrochloric acid to model digestion, test tube racks, and graduated cylinders to perform various experiments. This project will allow students to explore a variety of careers and enrich their STEM experiences even more.
