This project is a part of the Hispanic & Latinx Heritage Month celebration because it supports a Latino teacher or a school where the majority of students are Latino.

My Project

My students attend a small autonomous public Title I high school where 93% of the student population are youth of color and 75% of the students qualify for the free lunch program. Even though a majority of the students come from adverse backgrounds, they are bright and enthusiastic learners who are eager to learn how cooking can help improve their well-being and connect them to their ancestral roots.

I’m offering my students an alternative way to learn about Latin-American history and cultural identity through the lens of growing, cooking, and eating culturally significant plant-based foods.

My students are interested in learning how growing and preparing food give us clues about our past; especially, about our culture and food traditions. Thus, we planted a therapeutic garden together that includes culturally relevant crops. We recently planted tomatoes, squash, pumpkins, onions, peppers, sweet potatoes, eggplant, and corn. We will cook what we grow in the garden and have group discussions on how preparing traditional dishes passed down for generations helps us connect to our identity, culture, and to our ancestral roots.

The therapeutic garden and outdoor kitchen are welcoming and inclusive safe spaces that unite the school community where intercultural and intergenerational interaction naturally happens. The cooking activities in my outdoor classroom will be focused on Latin-American, Black, Asian, and Native relevant foods. My students will: 1) use the cookbook to learn how to cook traditional Mexican dishes, 2) use the Abuelita chocolate to taste the difference between Mexican and American hot chocolate, 3) use the masa harina and tortilla warmers when we make homemade corn tortillas, and 4) use pantry items for cooking various dishes. This project will increase students' knowledge base about Mexican identity, culture, traditions, and history through the lens of food.
