Getting children excited about eating healthy foods and learning how to grow that food themselves is something I am extremely passionate about! Our garden at Gary Knox Elementary, which we proudly call our Garden of Learning, provides our students with hands-on opportunities to experience agriculture, nutrition, and the joy of growing their own food. I consider myself incredibly fortunate to teach Agricultural Science at a school with such a wonderful garden. Gary Knox Elementary is a high-poverty school, and many of our students do not have regular opportunities to experience or eat some of the fresh, healthy foods that we are able to grow in our garden. Through our Garden of Learning, we are working to change that by giving students meaningful experiences that connect the food they grow to the food they eat. Mr. Vic Smith, a local farmer who shares a dream of educating children about the importance of healthy eating, growing their own food, and agriculture in general, has been incredibly generous in providing us with this garden. Words alone cannot express our gratitude for his generosity and his belief in our students. We are now beginning the next phase of our Garden of Learning expansion by creating an outdoor classroom where students can learn, collaborate, and experience agriculture in an even more meaningful way. This space will include a concrete slab, shade structure, whiteboard, and convertible bench seating, providing a comfortable and engaging environment for hands-on outdoor instruction. Our vision does not stop there. The next phase of our garden expansion will include an outdoor cooking area and a greenhouse, allowing us to create a true “seed-to-consumption” learning experience for our students. Students will be able to plant seeds, learn how plants grow, care for and harvest their crops, and then prepare and enjoy the food they have grown. The greenhouse will also allow us to extend our growing opportunities throughout the year and teach students about sustainable agriculture and food production. Our goal is to help students understand that healthy food does not simply appear on a grocery-store shelf. It begins with a seed, requires knowledge and care to grow, and can ultimately become a nutritious meal. By experiencing every step of that process, our students will develop a greater appreciation for agriculture, healthy eating, and the hard work that goes into producing the food we eat. We are excited to continue growing our Garden of Learning and creating opportunities that will educate, inspire, and empower our students for years to come.
