Our students have historically been concerned about environmental issues in our state and community and the impact on their futures. As part of our curriculum, we read the book entitled Restoration in the Barrens. This text inspires our students to not only care for their environment but also take a greater interest in their local community. Our students were inspired to create a lunch club where they grow their own food, learn about good eating habits, and give back to the community. It is challenging for many of our students to fully understand what a healthy diet consists of for them and for their families. So through this kid-inspired project, we are hoping to drive their curiosities and help them reach an understanding that will drive their current and future eating habits while supporting overall community goals. We are hoping to provide the students with an indoor grow garden. This would enable them the opportunity to use our classroom and a full school year’s worth of time to grow a garden that would provide daily vegetables to our school and eventually work with our local food pantry to scale upwards and provide fresh nutritional food for our community.
