Using correct cutting techniques keeps one safe in the kitchen for the rest of one's life. Plus knife skills are an easy skill to pass to future generations. I tried teaching this skill this fall, but only had paring knives, so could not adequately teach "the claw" (must say that sounding like a manly mountain hermit of eleven or twelve years) nor other general knife skills. The knife skills I did teach were taught with the paring knives shared between two students. We used paper plates as our fake cutting boards. The book I am requesting is just a fabulous book that I used in my Nevada Foods classroom. I personally bought several and used them for graduation gifts. They are getting hard to find. I noticed Amazon had one left in stock.
