We will use the principles of evaporation, precipitation, and super-saturation to create a treat in a lab-group setting. The creation of rock candy is simple, stimulating, and practical. We will be using hot plates to boil water and sugar into a simple sugar that is oversaturated with sugar crystals. After adding the sugar, food coloring, and flavoring, each group will receive a jar into which they will pour their syrup. They will then suspend a skewer in the solution, and over the following week, will be able to observe the sugar crystals growing on the skewer to create rock candy. Students will take notes every day on the growth of their creation, and at the end of the week, will remove the candy to dry so they can take it home to enjoy!
