My students practicing knife skills is one of the most valuable skills I can hope to teach them. It will get them a job. The challenge is cost of buying materials for the students to cut. In fact, these kits would pay for themselves with the first use. This will allow them an unlimited amount of practice in a myriad of cuts. It will also give an avenue for my special needs students to engage with projects safely. This project will carry over to actual fruit trays, where we explore how the visual aspect and aesthetic of food helps to define flavor.
