Catering and event management is an important skill in the culinary industry. Business decisions can make or break any event planner, chef or event company. The goal is to set the students up with the proper knowledge and motivated to become entrepreneurs. These chafing dishes the student will be able to plan, source and execute buffets and catering events, this will help the students understand food cost, labor cost, time management, and proper planning for on and off-site food events. After the event, they will analyze food waste and cost to evaluate strategies and missed opportunities. Finally, they will report back to the chef instructor what they could have improved on.
