The students in the Practicum of Culinary Arts classes use the skills they have learned in previous classes, as well as, the skills they are learning in this class to run a restaurant for the teachers in our building each week. They also engage in catering events as they are requested. When the students are allowed to dress like a professional chef, they act more professional. Their actions and the way they talk to each other and the way they talk to the guests is more like a professional chef would do. When the tornado hit the building, we were relocated to another campus, and we didn't have any of our equipment or supplies, including our jackets and aprons. The teachers and our Alumni donated small appliances and equipment so that we could boost the morale of the teachers by having a restaurant day. The students were so concerned about looking professional that they decided they should all wear the same color. This was strictly their idea and that told me they really cared about looking professional. Recently, when we received our materials, we discovered that some of our jackets got wet and mildewed and had to be thrown away. Replacing one of the jackets will help us to teach the professional side of work-based learning in a culinary setting.
