My classes are high school students in grades 9 - 12 from a rural background. Many students live on farms or are closely related to agriculture. A majority of the students receive assistance through the school lunch program. Learning about healthy eating habits and food safety is a big issue, important not only to the students, but their families. The students have been able to share what they have learned to help their family members improve their nutrition. The Food Science classes teach students about where their food comes from, how to grow healthy food options, and how to utilize what is grown. In addition, students learn about food preservation methods and food safety. Classes maintain raised bed gardens and grow some of the food used in projects for class. The goal of the classes is to train students to make an impact in the community in the future.
