High carb, low carb, low fat, high protein—what do all of these words really mean? How can students learn more about the necessary nutrients in their food when they are bombarded by what food marketers and sensational journalists tell them on a daily basis? With all of the talk of the low carb diet and other fad diets, I will engage my students in a discussion to determine what healthy eating really is. Part of this discussion will involve using inquiry to analyze the components of different foods and determine what students are actually eating. Many students only know about carbs, fats, and proteins from what they've heard in the media. These essential components of our food have been painted varying shades of good and bad by the media and students will use this activity to look at the media depictions of food in a more informed way. I teach biology and environmental science at Wells Community Academy High School to sophomores and freshmen, respectively. I also teach an after school class called “CHEF: Can't Help Eating Food”. Wells is a Chicago Public School in the West Town neighborhood, although our students come from a variety of neighborhoods throughout the city. The majority of our students receive free or reduced lunch, so many of them have a limited say in the foods that they consume, but I hope to awaken them to the importance of the different types of food that they eat. In order for this learning experience to be a success, I need Food Nutrient Analysis kits for my students. I would like for them to bring in food samples to try and I will also provide food samples for them to analyze. I would like enough materials for my 35 biology students and my 20 students in my after school class. Ideally, I would like to share the materials with the three other teachers that are on my planning team and teach biology at Wells in order for 185 students to take part in this activity. This activity will take place in the context of a nutrition unit that will also introduce three of the major organic compounds that make up living things: lipids, proteins, and carbohydrates. Rather than just telling the students about the components of different types of food, I would like to help them investigate this question, making the learning experience more meaningful.
