Students in Nutrition and Wellness courses study the six basic nutrients in depth to form a base of knowledge that will be built upon during the rest of the semester. One project these students complete is a research project on a vitamin or mineral randomly selected. The students then create a visual aid, most commonly a poster, that is then presented to the rest of their individual classes as well as the other nutrition and wellness classes. The visual aid must have the name of the vitamin or mineral, what it does for humans, what happens if there is an excess of the vitamin or mineral and what happens if a human injests too much of the vitamin or mineral. These visual aids are then displayed in the classroom for various review activities as well as for others (parents, administrators, other teachers) to view.
To complete this project, student creativity is encouraged and a variety of materials are needed to allow this creativity to remain unstifled. Poster board is a basic necessity. Markers, crayons, and colored pencils are also needed. Colored paper and stencils are handy to use for those students who do not feel artistically inclined. Glue sticks are also a necessity as students use many magazine pictures to convey the location and availability of the vitamins and minerals.
I have found that students teaching other students is a great way to increase knowledge retention. Presenting to the rest of the class also readies the students to make further oral presentations that are required in other subject areas. Students enjoy having thier creations displayed and are oftentimes found searching the room for thier latest creations.
