Food Science - Hands-on Learning!

My Students

We teach a Food Science course at a small high school in south-central Wisconsin with BIG academic opportunities for students. While our students come from a rural background, we are located only 20 minutes from a major city.

The vision in our classroom is to introduce students to a wide variety of Food Science topics, methods and student interests to develop skills that will stay with them for years to come.

When students leave our classrooms, after spending anywhere from 1 to 6 years together, our favorite moments are when they come back to tell me they are still doing something that they first learned in the Food Science class.

My Project

The students enrolled in the team-taught Food Science course will learn the science behind making food like cheese, root beer, candy and tenderized meat. They will compare the taste and price of homemade food they made in class versus store bought food. A focus will also be on how to package and market food products.

Our students will learn how to preserve and can foods such as jam, jelly, sauerkraut and pickles.

The students will get a chance to dehydrate herbs, meats and fruits as well as compare the process of making ice cream vs. gelato vs. frozen custard.
