My students need the tools and supplies being purchased to actually learn how to can and dehydrate foods safely. The pressure cooker and dehydrator are the two main tools students will focus on for food safety.
My students have different personalities, different eating habits, different college and career expectations and goals. These combine to make educating children a challenge daily. I must think out of the box to create lessons that can reach all children to have a class that works for everyone. My students backgrounds vary. Some have two working parents, some may live in homes with a single parent who is the sole provider for the household, & some work after school to afford what their parents cannot. School-wide data shows at 13% of my school students are in SPED and 91% are economically disadvantaged. My students love working with food but don't grasp the concept of the food safety and preserving food for long term shelf life, food safety, and for emergencies such as hurricanes and snow days which we have seen recently in our community. By learning to preserve our foods, students can sustain food for future needs by canning and dehydrating for emergencies and for extending the shelf life of purchased or fresh grown foods.
This project teaches students the importance of preserving fresh grown foods and leftover foods for home use but also for emergencies such as hurricanes and snow storms not common to our area and sustainability. Another focus is food safety which is a certification exam my students are offered in my class which sustainability is not often thought of or an easy chapter to follow since most household no longer practice these techniques for food safety or longevity. By utilizing our Ag programs garden my students will be able to learn first hand how to select ripe fruits and vegetables and preserve them through a team teaching effort with the Ag students and Ag teacher. These projects help engage students in the learning which reaches beyond the textbook and helps expand their learning through hands-on projects.
