“Can we eat pineapple? I’ve never tried it!” So began a mile a minute discussion of all of the foods they simply couldn’t wait a moment longer to try. Pawing through a copy of “Eat This Not That! for Kids!” the kids came alive with suggestions for healthy food choices. Blueberries, grapefruit, and even peas. Oh, THAT’S what Brussels sprouts look like! "Miss! Does that mean we can cook BEETS?? I LOVE beets!" Surprisingly, this discussion was held by a group of 10-and 11-year olds who were notoriously against the consumption of vegetation of any kind. I watch every day as overcooked cafeteria vegetables are tossed in the trash without a second thought. Their typical snacks of choice? A bag of chips, some sticky sweet candy, and a half liter of blue soda. And in a fast-food saturated high-need urban community, healthy options are often obscured by the temptation of deep fried chicken and potatoes. Their excitement became mine. My fourth and fifth graders are anxious to learn, and I’m anxious to teach them about health, nutrition and cooking. And if all goes according to plan, my ultimate hope is to get the entire school involved! By teaching my students how to choose healthy foods and cook them, I will empower them to make healthy choices throughout their lives. Here’s the catch—our school is spatially challenged. The kids can’t wait to get cooking, but we can’t share the kitchen with the cafeteria crew as they’re preparing lunch for the day. Here’s how you can help!
