We currently do not have any proper knives for the students to learn culinary with. It gets very discouraging for them when they can not make the correct knife cuts, even though it's not all their fault. Some of these knife cuts are difficult to master and will take some time, but dull knives with loose handles are a bad combination for the safety of the students. We could use a lot to make our kitchens better for training students, but a class set of Dexter chef's knives is a great start to getting them learning the basics. These students are dedicated and eager to learn how to cook, I am simply desperate to give them the tools they need to properly learn.
