On average, each morning you can see one out of three students with a bag of Takis. Takis are fried spicy corn tortilla based chips rolled into an attractive shape. Like many corn chip based products, they are loaded with saturated fats, trans-fats, sodium, and artificial chemicals, flavors, and colors. They are filled with harmful preservatives, sodium, and fat. As a Title I school, our student population contains high percentages of children from low-income families, which means they are all on a free breakfast and lunch program. Also, every corner store within walking distance of our school has a plethora of unhealthy, affordable options just like Takis. These unhealthy choices will show to have long lasting effects on their nutrition. It is not only the students that need a culture change surrounding food, but the community as a whole. Healthy habits need to become a priority for students and their families, and we can do this through awareness and availability. These students will be learning to solve their own problems using STEAM. Proper education is an essential component to improving dietary habits and reversing undernutrition. Students can utilize the microscopes and computer mouses to research about nutrition, create an effective advertisement campaign for a nutritional movement throughout their community, and develop healthy affordable alternatives for their local stores. The mouses will be used for coding purposes and the microscopes will help them research the components of their daily food choices. Students will use excel to organize their data and graphic design programs to analyze and create social media campaigns to promote nutritional food choices. My ultimate goal is for them to create their own app to aid the advancement of the community in wholesome nutritional options. This may also open doors to future career options.
