I'm requesting recording and audio visual equipment to record my students performing cooking demonstrations using ingredients grown our school's organic garden. A study from Rutgers Cooperative Extension, Learning Through the Garden, shows that gardens can function as living laboratories. Students who participate in gardening have a considerable increase in grade point average, utilize new learning styles, and develop their perspectives and ways of learning to incorporate critical 21st-century skills such as "curiosity, flexibility, open-mindedness, informed skepticism, creativity, and critical thinking." The students will post the recording on social media to promote healthy eating and prevent child obesity. Health Implications of Child Obesity Being an overweight/obese child has an enormous impact on physical, mental, and emotional health along with social and overall development. Research has shown overweight/obese youths have a higher risk of chronic conditions such as asthma, hypertension (high blood pressure), high cholesterol, bone/joint problems, sleep apnea, and even certain types of cancer. Equally important is the emerging health concern of metabolic syndrome among American youths, which is a major risk factor for cardiovascular disease and type 2 diabetes.
