My students need access to healthy snacks all day long. One way to provide this is by empowering kids to grow their own fresh vegetables in a lighted growing rack, which will live in our classroom all year. The CDC says "...undernutrition can negatively affect overall health, cognitive development, and school performance" (CDC 2017). If I expect my students to be attentive and thoughtful learners, I need to do what I can to make sure their bellies are full of nutritious food. By your generous donation, our class will be able to grow their own snacks, year round. A diet of Goldfish crackers does not a good learner make! I plan to balance out our cracker consumption with easy to grow vegetables at first, like lettuce and carrots. As our year goes on and we become more confident gardeners (and more adventurous eaters), hopefully we can branch out our crops to cherry tomatoes, peas, or celery.
