The school I teach in is comprised mostly of families who live under the poverty line. Many of our middle school students prepare the family meals after school because mom is at work. They are always so interested in what I have made and when they see things like handmade pasta, they express to me that they'd love to know how to do that. I have decided to start a Healthy Cooking Club to teach my students how to prepare fresh food, shop for local ingredients, teach basic skills and knife skills so that they can prepare healthy food at home. We plan to include parents and have this be an education for the whole family. Our city recently opened a Culinary Art College and we'd like to help students prepare themselves for this field when they leave the Niagara Falls City School District!
