Students are composed of juniors to seniors; Caucasian, latino, Pacific Islanders, and other races. This is the largest public high school in our area, on our island. Although our focus is to improve health and wellness through culinary education and culinary gardens, being on an island increases the need to understand self sustainability and food security even more. Establishing a sustainable garden requires hard work and students are best inspired by seeing what can be prepared from these vegetables. From sun dried eggplant, rehydrated, then sauteed with fresh chives and basil, made into a marinera sauce for a pasta dish; to freshly harvested squash marinated in olive oil and garlic and simply grilled; students are so much more excited to invest in what goes into the ground and what is harvested. Food inspires and encourages hard work. The preparation of new menus and food creations, create an avenue of much greater engagement amongst these high school students.
