Everyday my instructional assistant and I are greeted by 7 enthusiastic and energetic students. Each student has faced many physical and mental challenges but have overcome so many of them as they enter our program at age 18. We have our own apartment off campus complete with a full kitchen where we create a menu each day to balance their nutrition and help to teach and encourage healthy eating. They bring in the local free paper weekly and we plan our menus around the "good deals" from the grocery stores. Our climate is cold from November until April. We have designated January as our "Souper Tuesday " month. Each week we will plan, shop, and begin cooking on Monday and enjoy our nutritional soup on a Tuesday lunch.
